Sullana, 2021(Universidad Nacional de Frontera, 2022-09-01) Girón Moncada, Danitza Xiomara; Berrios Tauccaya, Oscar JulianEl consumir alimentos inocuos, es uno de los derechos de las personas, y esta inocuidad alimentaria debe de ser garantizada por las autoridades sanitarias, a través de supervisiones y capacitaciones a los dispensadores de alimentos y en especial aquellos que comercializan carnes. Por ello, se debe realizar estudios, que permiten conocer si los alimentos expendidos en la ciudad de Sullana, cuenten con esa garantía de inocuidad. Bajo ese contexto, el presente estudio se enfocó a determinar la diferencia de la carga microbiana en cinco muestras de carne fresca de Sus scrofa domesticus (cerdo), de diferentes puestos de expendio de la ciudad de Sullana, 2021. Cinco muestras, fueron las estudiadas, procedentes de diferentes puestos de ventas, a las cuales, se les aplicó el ensayo microbiológico, para conocer la carga microbiana. Los hallazgos encontrados y estos al ser analizar y discutirlos, permitieron aseverar que teniendo un nivel de significancia del 0,05; y un p-Valor de 1; la carga microbiana de las muestras de carne fresca de Sus scrofa domesticus (cerdo), es estadísticamente diferente en los principales puestos de ventas de los centros de abastos de la ciudad de Sullana, 2021.Item Open Access Población microbiana en leche fresca de bos taurus, en diferentes puestos de ventas. Sullana, 2021(Universidad Nacional de Frontera, 2022-08-31) Viera Ruiz, Daniela Sarain; Berrios Tauccaya, Oscar JulianEl conocer la población microbiana en los alimentos es muy importantes para su conservación y tomar medidas pertinentes para que no afecte la salud del consumidor. La leche, es un alimento principal dentro de la dieta de las familias y el conocer la población microbiana que se desarrolla en estos alimentos, es de vital importancia. Ante esta situación, el estudio se enfocó en determinar la diferencia de la población microbiana en muestras de leche fresca de Bos taurus (vaca), en los principales centros de venta ambulatorias de la ciudad. El estudio presenta un diseño investigativo no experimental. Se analizaron 5 muestras de diferentes puntos de venta ambulatoria; muestras que fueron sometidas a 37 °C de incubación, para identificar los coliformes totales y a 45 °C para la identificación de coliformes fecales. Los hallazgos encontrados señalan que en aproximadamente se encontró en promedio de 16,36 X 109 UFC/ml correspondiente a coliformes totales y sin presencia de E. coli, como representantes de coliformes fecales. Estos hallazgos permitieron señalar que con un α de 0,05, un nivel de confianza del 95 %, una t calculada (tc) de 1,967, un p-Valor de 0,106; se puede aseverar que existe diferencia significativa en la población microbiana en muestras de leche fresca de Bos taurus (vaca), en los diferentes puestos de ventas de la ciudad de Sullana, 2021”.
