Item Open Access Aplicación de la espectroscopia THz en el Análisis no Invasivo de Alimentos: Una revisión(Universidad Nacional de Frontera, 2022-04-01) Infantes Otero, Luz Angelica; Castro Silupú, Wilson ManuelEn la actualidad, la industria alimentaria busca implementar técnicas no invasivas para reducir pérdidas en las actividades de control de calidad, Por tanto; se necesitan métodos de detección rápidos, seguros, fiables a fin de disminuir costos y tiempo de procesamiento. La espectroscopia THz; es una técnica que principalmente su capacidad de penetración y su potencial permite desarrollar modelos de predicción. El objetivo de esta revisión sistemática fue realizar un análisis científico sobre la aplicación de la espectroscopia THz en el análisis no invasivo de alimentos. La metodología se basó en recopilar artículos publicados de editoriales con más difusión académica (Elsevier, Springer, wiley y sou, IEEE Xplore y Taylor and Francis) en el periodo entre los años 2007 al 2021. En total se colectaron cincuenta y dos artículos, seleccionando cuarenta y cinco (45) por ser estudios primarios. La mayoría de estos artículos de las muestras trabajadas fueron diferentes productos alimenticios como (carne, chocolate, aceite, productos agrícolas, fruta y matrices alimentarias mixtas). Esto permite concluir en el uso de tecnologías no invasivas, como la espectroscopia THz, generando un gran interés para la ingeniería alimentaria, al ser esta una tecnología eficiente, rápida y no destructiva.Item Open Access Una Revisión: Aplicación de la Espectroscopia dieléctrica al Control de Calidad de Productos Marinos(Universidad Nacional de Frontera, 2021-08-23) Vega Mejia, Leibi Miriam; Castro Silupú, Wilson ManuelExiste creciente demanda por tecnologías no destructivas para los procesos de análisis de los alimentos, entre estos los productos marinos. Una de las técnicas que despiertan más interés es la espectroscopía dieléctrica (ED); principalmente debido a su capacidad de penetración y su potencial para desarrollar modelos de predicción o clasificación basados en estos. Por tanto, el objetivo de esta revisión sistemática fue abordar las aplicaciones de la ED aplicada a productos marinos. La metodología se basó en recopilar artículos publicados de editoriales con más difusión académica (Elsevier, Springer y Taylor and Francis) en el periodo entre los años 2010 a 2020, discriminando los estudios primarios y con mayor relación al tema en concreto. En total se colectaron cincuenta y cuatro (54) artículos, seleccionando treinta y ocho (38) por ser estudios primarios. En la mayoría de estos artículos las muestras trabajadas fueron productos cárnicos (cerdo, pollo, res y productos marinos) principalmente en el rango de microondas. Esto permite concluir que la ED es una tecnología valiosa con creciente interés para la ingeniería alimentaria por su aplicabilidad en el análisis no invasivo de alimentos.Item Open Access Revisión: Técnicas empleadas en la evaluación de la caildad de la caballa (Scomber japonicus peruanus), durante el proceso de descomposición(Universidad Nacional de Frontera, 2021-05-18) Saavedra Garcia, Monica del Rosario; Castro Silupú, Wilson ManuelEn las últimas décadas, se han realizado diversas técnicas para la medición de la calidad de la caballa (Scomber japonicus peruanus) y otros productos hidrobiológicos. Esto dado al aumento de la demanda de los recursos hidrobiológicos y las características altamente perecederas de estas especies. La selección de información de los datos obtenidos sobre estas técnicas, es un tema de investigación muy importante y esencial para realizar el control de calidad, la clasificación de la frescura, estimar los cambios de calidad durante el proceso de descomposición de la caballa y otras aplicaciones para la industria pesquera. Esta revisión presentó un análisis sistemático de la literatura; referente a las técnicas empleadas en la medición de la calidad de la caballa. Además, se realizó un estudio de los principales cambios físicos, químicos, microbiológicos y sensoriales analizados, las técnicas y los principales problemas en la evaluación de calidad de esta especie. Para este estudio se obtuvo información de las principales bases de datos (ScienceDirect, Springer, Wiley, Taylor and Francis, ACS Publications, Google Académico) cubriendo los años 2007 hasta 2020, obteniéndose un total de 88 artículos y seleccionándose 43 estudios primarios. Los resultados obtenidos determinaron que la mayoría de los estudios primarios utilizaron las técnicas no tradicionales como: cromatografía líquida de alta resolución, cromatografía de gases, colorimetría, PCR-RFLP, etc. Estas técnicas presentaron diversos problemas en su aplicación. Asimismo, se identificaron técnicas no tradicionales como: Resonancia Magnética Nuclear (RMN), espectroscopía, microscopía, biosensores, etc. Demostrando ser eficientes en la evaluación de la calidad de la caballa.
