Item Open Access Obtención de compuestos bioactivos por fermentación en estado sólido a partir de subproductos de frutas procesadas: Una revisión(Universidad Nacional de Frontera, 2021-04-27) Ruiz Flores, Luis Alberto; Cornelio Santiago, Heber PelegEl interés actual por el aprovechamiento de los residuos agroindustriales se ha incrementado, y con ello el empleo de métodos limpios y amigables con el ambiente para este fin. Frente a esta situación, la fermentación en estado sólido, se muestra como una opción potencial para poder recuperar compuestos de alto valor biológico, que se encuentran presentes en las matrices de los subproductos de origen agroindustrial, principalmente para aquellos compuestos ligados a los macronutrientes que no son fácilmente recuperables mediante un método de extracción convencional. En esta revisión, se describe la composición de los subproductos de frutas procesadas tales como la uva, manzana, granada y mango, sobre la técnica de fermentación en estado sólido (FSS) y aquellos factores más influyentes en este bioproceso; además se discute el uso de estos subproductos como sustrato en la FSS para la recuperación de compuestos bioactivos. La FSS ha sido utilizada principalmente para liberar compuestos fenólicos que se encuentran conjugados, dentro de la matriz de estos subproductos. La temperatura, humedad relativa, humedad del sustrato, tamaño de partícula, pH y transporte del calor metabólico (dentro de los biorreactores) son los factores determinantes dentro de la FSS. Hay pocos estudios enfocados en enriquecer carotenoides en los residuos agroindustriales, o el uso de los mismos como sustrato para el crecimiento de microorganismos productores de estos compuestos. Además, la cáscara de mango como sustrato para la FSS, ha sido muy poco estudiada, y más aún con el objetivo de liberar compuestos fenólicos y carotenoides presentes en este subproducto.Item Open Access Una revisión de la obtención de compuestos bioactivos a partir de subproductos de cítricos procesados: Fermentación en estado sólido y métodos de extracción(Universidad Nacional de Frontera, 2021-05-19) Juarez Ojeda, Carlos Eduardo; Cornelio Santiago, Heber PelegEn los últimos años el interés por la investigación de los subproductos generados por la industria de mandarina, limón y toronja se ha incrementado con la finalidad de agregar valor a estos subproductos, así mismo estudios que emplean tecnologías emergentes, usando solvente amígales con el ambiente, se ha incrementado con el mismo propósito. En este contexto, la fermentación en estado sólido (SSF) y los métodos de extracción asistida por microondas y por ultrasonido, extracción con agua subcrítica y fluido supercrítico son presentados como alternativas potenciales para ayudar a recuperar compuestos bioactivos presentes en los subproductos de mandarina, limón y toronja. El objetivo de este manuscrito fue describir la composición química de los subproductos de la mandarina, limón y toronja, así mismo fueron descritos los factores que influyen en la SSF cuando se emplean estos subproductos como sustrato. También se describieron las condiciones de los diferentes procesos de extracción para obtener los compuestos bioactivos presentes en los subproductos de mandarina, limón y toronja. La SSF se centra en la recuperación de pectina de la cáscara de limón y los factores como humedad relativa, temperatura, inoculo son los factores determinantes en este proceso. La recuperación de compuestos bioactivos por tecnologías emergentes presentan mayores rendimientos en los extractos obtenidos, los diferentes estudios presentados se centran en recuperación de aceites esenciales, pectina y compuestos fenólicos, y por otro lado se presentan pocos estudios para la obtención de carotenoides y fibra dietética a partir de la subproductos de mandarina, limón y pomelo.Item Open Access Una revisión de la obtención de compuestos bioactivos de los subproductos del procesamiento y hoja del mango (mangifera indica L.) empleando tecnologías emergentes(Universidad Nacional de Frontera, 2021-05-19) Arevalo Oballe, Diana Carolina; Cornelio Santiago, Heber PelegEl mango (Mangifera indica L.) es considerada una de las frutas tropicales más valiosas del mundo, posee aroma, sabor y alto valor nutritivo, es por ello que en la actualidad las hojas y subproductos del mango (Mangifera indica) han sido estudiados, estos contienen compuestos bioactivos que son beneficiosos para la salud del hombre, es desde allí que parte la necesidad de haberlos descritos y como pueden ser extraídos sin ser afectados. En esta revisión se dio a conocer la composición química de hojas, cáscara y semilla del mango dando a conocer que con el uso de métodos amigables con el medio ambiente: extracción por ultrasonido (UAE), extracción asistida por microondas (MAE), extracción de fluidos supercríticos (SFE), extracción con líquidos presurizados (PLE) y extracción con agua subcrítica (SWE), se ha logrado obtener el mayor contenido de estos compuestos ya mencionados como son la mangiferina y compuestos fenólicos en hojas, carotenoides y flavonoides en cáscara y contenido fenólico en la semilla de mangoItem Open Access Una revisión de la obtención de compuestos fenólicos a partir de cáscara y semilla de palta (Persea americana Mill.), empleando tecnologías emergentes(Universidad Nacional de Frontera, 2021-05-19) Valdiviezo Marcelo, Jaime; Cornelio Santiago, Heber PelegLa industrialización de la palta genera grandes cantidades de desecho de cáscara y semilla que representan el 18 y 13 % del peso total del fruto respectivamente, que generalmente son eliminados. Estudios han demostrado que estos subproductos poseen altos contenidos de compuestos fenólicos que son beneficiosos para la salud humana, es por ello que ha generado mayor interés para la industria alimentaria, cosmética y farmacéutica; las cuales han desarrollado y empleado numerosos métodos de extracción con la finalidad de recuperar la mayor cantidad de dichos compuestos. En esta revisión se describe la composición proximal y fenólica de la cáscara y semilla de palta. Además, se hace énfasis en las variables de proceso de las tecnologías convencionales (soxhlet y maceración) y emergentes (extracción asistida por ultrasonidos o microondas y extracción por líquidos presurizados) empleadas en la extracción de compuestos fenólicos, para así tener una visión más clara de las tecnologías más eficientes y que estas sean estudiadas a fondo en el aprovechamiento de estos subproductos agroindustriales. La composición proximal y fenólica de la cáscara y semilla de palta, está sujeta a la variedad del cultivo y a al estado de madurez de los mismos, asimismo mediante las tecnologías emergentes se evidencian mejores resultados en el contenido total de compuestos fenólicos, no obstante, aún se requieren estudios de la correlación de factores como: tipo de secado en los subproductos, tipos de solventes y parámetros de extracción.; ya que podrían mejorar la eficiencia y rendimiento en la recuperación de estos compuestos.Item Open Access Una revisión de los beneficios en la salud humana y métodos de extracción de compuestos bioactivos de Vaccinium meridionale(Universidad Nacional de Frontera, 2021-05-15) Arana Torres, Nancy Maribel; Cornelio Santiago, Heber PelegEl interés por encontrar alimentos que aporten beneficios a la salud humana se ha incrementado últimamente, y con ello el uso de métodos eficientes que puedan extraer sus compuestos bioactivos. La baya Vaccinium meridionale es una fruta funcional común en todo el mundo y una de las frutas con mayor contenido de compuestos fenólicos, los cuales aportan efectos antioxidantes, anti-inflamatorios y anticancerígenos en la salud humana. Frente a esta situación, las tecnologías convencionales y emergentes son usadas para extraer compuestos fenólicos. En esta revisión fueron descritas la composición química de Vaccinium meridionale y su beneficio en la salud humana, y los métodos de extracción convencionales como la percolación y no convencionales como la extracción asistida por ultrasonido, asistida por microondas, la extracción acuosa de dos fases y la extracción con fluidos supercríticos que se han empleado para extraer compuestos fenólicos. Los compuestos fenólicos que más abundan en esta baya son los ácidos fenólicos con 740.23 mg equivalentes a ácido gálico/100 g fruta fresca y flavonoides 284.12 mg equivalentes de cianidina-3-glucósidos /100 g fruta fresca. Estos compuestos tienen diversos efectos beneficiosos en la salud, pero uno de los más resaltantes es su propiedad de eliminar los radicales libres que están implicados en el desarrollo de enfermedades, principalmente el cáncer. Las tecnologías de extracción desempeñan un papel importante por ello en esta revisión de todos los métodos empleados el más eficiente es la extracción acuosa de dos fases y el que tiene menor efecto sobre aquellos compuestos es la extracción por microondas.Item Open Access Separación de compuestos bioactivos a partir de maíz morado: Una revisión(Universidad Nacional de Frontera, 2021-05-19) Espinoza Alvines, Juan Diego Neil; Cornelio Santiago, Heber PelegEn la actualidad el maíz morado es conocido alrededor del mundo como un cereal rico en compuestos fenólicos sobre todo en antocianinas, es por ello que dentro de la industria alimentaria ha sido considerada como una alternativa escalable y económica al tinte sintético, además posee amplios beneficios en la salud por ser una fuente rica en compuestos bioactivos. En este trabajo, se recabó bibliografía de composición química y separación de compuestos bioactivos del maíz morado (Zea mays), proporcionando así una revisión de las diferentes técnicas convencionales y no convencionales que pueden ser utilizadas para la extracción de dichos compuestos a partir de las diferentes partes del maíz morado (Zea mays). Los compuestos bioactivos presentes podían ser extraídos con métodos convencionales, pero estos usaban disolventes como alcohol, agua o una combinación de ambos, presentando desventajas como el alto consumo de disolventes y pérdida de los compuestos de interés, sin embargo, al utilizar métodos no convencionales los disolventes mejoraron la calidad y cantidad de los extractos obtenidos, manteniendo sus propiedades nutricionales y sensoriales. En la presente revisión se encontró que el compuesto mayormente presentado es 3-O-glucósido el cual es la encargada de brindar la coloración característica a este cereal.
