Item Open Access Determinación de ácido ascórbico y evaluación sensorial en yogures de Mangifera indica y Myrciaria dubia(Universidad Nacional de Frontera, 2022-04-18) Barrios Rentería, Juan Carlos; Espinoza Espinoza, Luis AlfredoLa deficiencia de algunos compuestos bioactivos como la vitamina C en humanos ha sido asociado con un incremento de la morbilidad y mortalidad causada por enfermedades como el cáncer y afecciones cardiovasculares. Con el objeto de evaluar la presencia de ácido ascórbico de yogures de Mangifera indica (mango) y Myrciaria dubia (camu camu) así como sus cualidades sensoriales. Se formularon 4 yogures de mango y camu camu (F1:15% y 5%; F2:15% y 10%; F3: 20% y 5% y F4: 20% y 10% y una muestra control: yogurt de fresa). Se analizaron el pH y densidad de la leche fresca obtenida de un centro de acopio local; nivel de azúcares de las frutas y contenido en ácido ascórbico en yogures. Se evidenció que la leche comercializada localmente presentó una baja densidad (1.026 g/mL) y un pH de 6.63, indicadores que esta materia prima requiere de mayor cuidado en su manipulación. El nivel de azúcar de los distintos yogures no presentó diferencias significativas en la evaluación sensorial, siendo la formula (F3) la que gozó de una mayor preferencia. El contenido en ácido ascórbico de yogures fue por el siguiente orden (F1: 63,2 mg/100 g; F2:114,3 mg/100 g; F3: 57,3 mg/100 g; F4: 115,1 y la muestra control F5:11,5 mg/100 g) estos datos indican que las diferencias son significativamente importantes entre las formulaciones. En conclusión, Es posible formular yogures empleando mango y camu camu manteniendo su alto contenido en vitamina C cuidando de no sobrepasar el umbral de acidez.Item Open Access Evaluar el efecto del secado en el contenido de fenólicos totales y capacidad antioxidante de cáscara de pitahaya (Hylocereus guatemalensis)(Universidad Nacional de Frontera, 2023-01-20) Castillo Zapata, Katerin del Carmen; Reyes Diaz, Jorge David; Espinoza Espinoza, Luis AlfredoLa cáscara de la pitahaya roja “fruta del dragón” representa entre el 18 a 24% del peso de la fruta entera, esta cáscara es una fuente importante de compuestos bioactivos, generalmente es considerado como descarte en la industria alimentaria generando acumulación de residuos y contaminación ambiental. El objetivo fue evaluar el efecto del secado en el contenido de fenólicos totales y capacidad antioxidante de cáscara de pitahaya (Hylocereus guatemalensis). Las frutas de pitahaya roja procedente de la ciudad de Huaral, cuyas cáscaras fueron cortadas en 4 partes iguales y deshidratadas mediante secado por convección a 40, 50, 60, 70, 80 y 90 ºC, se molieron, tamizaron y envasaron en bolsas herméticas. La determinación de contenido en Compuestos Fenólicos Totales (CFT) fue realizada por el ensayo colorimétrico de Folin Ciocalteu y la capacidad antioxidante usando el método de secuestro del radical DPPH. La temperatura de secado en cáscara de pitahaya roja influyó de manera significativa en los CFT y % de inhibición del radical de DPPH, es decir, conforme aumentaba la temperatura de secado de 40 a 90 °C; los resultados de CFT se incrementaron (116,7 ± 26,0 a 328,8 ± 57,5 mg equivalente de ácido gálico/100g de cáscara seca) y los % de inhibición del radical DPPH (22 a 50 %) también aumentaron. Los resultados obtenidos evidencian que el método de secado por aire caliente a temperaturas de 50 a 90 °C puede conservar el contenido de fenólicos totales y capacidad antioxidante en la cáscara de pitahaya roja.Item Open Access Harina de mango (Mangifera indica): Efecto del secado convencional sobre el contenido de compuestos bioactivos(Universidad Nacional de Frontera, 2022-08-31) Ruiz Flores, Luis Alberto; Espinoza Espinoza, Luis AlfredoEl mango es un fruto cuyo contenido en compuestos fenólicos y vitamina C es considerable, es ampliamente cultivado en la región Piura, aporta el 70% de la producción nacional; sin embargo, las pérdidas posteriores a la cosecha y procesamiento superan el 31%. Ante ello, la obtención de harina de mango se muestra como una alternativa viable de aprovechamiento. No obstante, el método de secado influye directa o indirectamente sobre el contenido de las moléculas bioactivas. El objetivo de esta investigación fue determinar el efecto de los parámetros de secado sobre el contenido de compuestos bioactivos en harina de mango (Mangífera indica) var. Kent. Se recolectaron muestras de mango de descarte del distrito de Tambo Grande (pH:3.73 y 7.74°Brix), la pulpa fue laminada a diferentes espesores (2.5 y 5 mm) y deshidratada mediante secado convectivo a 40, 50 y 60oC, se pulverizaron, tamizaron y envasaron. La cuantificación de Vitamina C y compuestos fenólicos totales fueron realizados por el método de valoración con 2,6 diclofenolindofenol y ensayo colorimétrico de Folin Ciocalteu en un espectrofotómetro UV-Vis respectivamente. Se evidenciaron diferencias significativas entre los tratamientos al 95% de significancia, el mayor contenido de vitamina C (126.95 mg ác. Ascórbico/100g de harina) fue en el tratamiento T3 (T:50°C y espesor: 2,5 mm) mientras que el T5 (T:60°C y espesor: 2.5mm) demostró mayor contenido en compuestos fenólicos totales (294.10 mg GAE/100 g de harina).
